The vineyard of the Domaine de la Perdrix is located in a small area of the Roussillon called Les Aspres and is sustainably managed, which means there is no use of chemical products at all in the vines. After selling most of their grapes to the local cooperative, the Gil family started bottling again their own wines in the late 1990’s.
This wine is a classic blend of Grenache Noir, Syrah and Carignan, the most common red grapes of this Mediterranean region. After a short vinification, it spends 3 months in vats - no oak - to keep its freshness and lovely fruit notes (blackcurrant, red berries). Some nice scent of spice and garrigue also enhance the fruity palate. Excellent red wine that can be served slightly chilled with charcuterie or grilled red meat: Perfect to chill and relax with friends - which is what “coule douce” litterally means after all!

16/20 "Grenache, Syrah, Carignan on silty clay. From Les Aspres in Roussillon and a winery practising sustainable viticulture. Three months in vats post fermentation, no oak. Smells like cement and red-berry jam. Snappy, fennel-scented fruit, menthol-cherry throat lozenges with a cheeky pop of bitter-orange sherbet. A wine that would pep you up at the end of a long day.
