Le Clos du Château is the latest cuvée form the Philippon family, made exclusively form vines located around the Château and inside closed walls - which is called a "Clos". This small plots has been managed within the sustainable Agriculture practice - no chemicals, manual harvest - and has been ages for 20% in oak barrels. The result is a slightly more dense structure than the classic Chablis, with a discrete buttery touch, the same aromas of white flowers and yellow fruit (peach) on a mineral background. Quite a surprising but classy Chablis!

89/100 "The 2015 Chablis Clos du Château comes from 40-year-old vines and is raised for 16 months in 80% stainless steel and 20% oak barrels. It has a clean and precise bouquet with a fine bead of acidity and quite a mineral drive, with a touch of shucked oyster shell developing with time. The palate is well balanced with a brisk, citric opening. I appreciate the terseness and tautness of this Chablis; it feels quite persistent on the sappy finish. Very fine."

93/100 "An surprising Chablis, round and elegant with noble matter; very promising."
"The Unavoidable" is the latest effort from the Domain to stick to current trends and customer preferences. 30% of the wine is vinified is oak barrels - something quite unusual for a Chablis, although this practice is gaining ground year after year. The result is a slightly more structured wine, with hints of white flowers, toast and smokyness on the...
"Les Fourneaux" is a tiny and beautiful Premier Cru plot with a South West exposure. This sunny vineyard gives intense aromas of ripe yellow fruit and flowers; it's lovely buttery structure is balanced by a refreshing minerality. A really elegant Chablis Premier Cru, which has everything we can expect from an unoaked Chardonnay and a little bit more, with...
"Mont de Milieu" is THE parcel Château de Fleys is famous for, and is also one of the most prestigious in Chablis. A Mont de Milieu for just £21 is pretty rare... Also lying towards South, these vines are ideally located and produce powerful and fruity Chablis. Coming from 50 year-old vines, it is a remarkably well structured and concentrated wine with...
This Chablis is also coming from the "Mont de Milieu" parcel but is made of from 80 year-old, low-yielding vines. 30% of the wine is aged in oak barrels. As a result it is a fruity, structured Chablis with intense aromas of exotic fruit and a hint of hazelnut. Very, very elegant Chablis which we can only recommend, especially to amateurs of more buttery...
